Peaberry’s Jasmine tea is grown and harvested in the early spring in the Fujian Province, one of China’s premier tea-growing regions located in the SE. The tea is plucked, processed and stored until late summer when the jasmine blossom appears. The leaf is then briefly re-fired (or heated), then mixed with layers of fresh flower buds, which open, scenting the tea with aromatic oils.
The finer the grade of jasmine, the more times the process of adding/ removing fresh blossom is repeated, sometimes up to 7 times for the finest grade. The spent blossoms are then used in lesser grades of tea. Tip the more blossom you see in a tea, the lower the grade.
