You'll occasionally see a note that a particular coffee is "Out of Stock" for some reason.

Because we only purchase specific lots of coffee or tea — selections we believe to be the freshest and most flavorful — we are sometimes caught out while the new harvest makes its way to us.  And after we receive supplies, there are still a few necessary steps before the coffee or tea is ready for you.

For instance, both Mocha Mocca (Custom Blends) and Bali Hai Blend (Fair Trade/Organic) include coffee from Yemen. The new harvest has arrived, but now we are “cupping” the beans -- evaluating these beans and their flavor, so we can roast them appropriately and incorporate them in the blend.
